It’s Cold Outside….Warm Winter Food on a Budget
I must admit, most of my food ideas are generated from a craving. In this case Vancouver’s cold and rainy weather was my inspiration. Beef Stroganoff! Haven’t made it in years.
Pretty simple to make, especially in a slow cooker. Beef, onions, seasoning, mushrooms, tomatoes, broth and sour cream. Served on a bed of egg noodles. As I tossed it all in the pot, I wondered what this meal was going to cost.
The beef was $5.00 ($2.99 per pound sirloin tip roast), the vegetables $2.72 and the egg noodles $2.00 for an approximate total of $10.00. It will feed 4 of us 2 substantial meals each. We have 2 small children so the conversion to 3 adults is for 2 meals each or a family of 4 for a dinner and a lunch. It could be made more cheaply with less meat/different cut, a can of mushroom soup (substitution: vegetables) and rice (substitution: egg noodles).
Very good. Good nutrition and reasonable cost for 6 adult servings.
